1 cup margarine or butter
2 cups sugar
2 large eggs
2 tsp. vanilla
1 tsp. lemon rind
3 1/2 cups flour
1/2 tsp. salt
1 TBL. baking powder
2 cups chopped walnut pieces (cut back if using black walnuts)

Directions:
Directions:
Sift flour, salt and baking powder together and set aside. In large bowl cream butter, sugar eggs and vanilla. Add walnuts and lemon rind. Gradually blend dry ingredients into the mix. Divide into fourths and shape in enlongated posts. Wrap in wax paper to help hold final squared shaping. Chill for at least 6 hours. Slice generous 1/4" thick, bake on lightly greased sheet or parchment paper 375º for 8-10 minutes or desired crispness.
