Chili or cooking oil to brown meat
2 lbs. lean boneless pork in 3/4" cubes
1 medium onion chopped
2-3 cloves garlic chopped
2 TBL. curry powder
2 tsp. finely minced ginger root
1/4 tsp. red pepper
1/2 cup water
2 TBL. flour
1 16 oz. can tomatoes chopped (or fresh chopped)
2-3 carrots chunked
1 medium sweet potato peeled and chunked
1/4 cup mixed dried fruit bits
1/4 cup snipped parsley
1/4 cup chopped peanuts

Directions:
In large skillet heat oil and saute meant onion and garlic until meat is brown. Stir in curry powder, ginger root and red pepper. Cook and stir one minute more. Stir together water and flour and add undrained tomatoes, carrots, sweet potato and dried fruit bits. Add meat mixture and combine.
Cover and bake in 350 oven 1 hour or until meat is tender. Salt as desired. Sprinkle each serving with parsley and peanuts.
