1 sm round (8 oz) ripe Brie or Camembert
Melted butter (about 4 T.)
3/4 c. Apricot or raspberry jam (optional)
4 sheets of Phyllo dough, defrosted

Trim off any wax from outside of Brie. Brush each sheet of phyllo with meted butter and carefully stack one on top of the other to form a pile (be careful the phyllo is paper thin!) Lay the phyllo into a pie plate or quiche dish with the ends hanging over the edge. Spread half the jam in the center of the dough, top with brie and the rest of the jam.Bring the phyllo up to cover the Brie and seal well. Brush the entire "package" with melted butter (make sure you flip it over to get all of it!) I also brush the outside of the phyllo dough with some egg white to make it brown.

Bake at 375F for 20 minutes. Remove and let sit for 10-20 minutes before serving. Serve with crackers or small pieces of bread.
