1 med. eggplant, cut in half lengthwise
1 cup sour cream
2 Tbsp. chopped, fresh parsley
1 1/2 tsp. sesame seeds
1/4 tsp. salt
1/2 tsp. fresh minced garlic

Directions:
Directions:
Heat oven to 350º. Place eggplant in baking pan and cook for 55-65 minutes or until fork tender. Cool 20 minutes. Scoop out pulp and discard skin. Place pulp in blender or food processor and blend at high until smooth. In medium bowl stir together all of the ingredients. Cover and refrigerate for 2 hours.
