3 pkg. frozen, chopped spinach (thawed and drained)
3 lbs. ground round
2, 8 oz. pkgs. cream cheese, softened
2 large onions chopped
1/2 cup grated parmesan cheese
salt and pepper to taste
2 large eggs
24 oz. pkg. jumbo pasta shells
1 large jar pasta sauce or your favorite from scratch recipe

In a large pan, cook the ground beef until browned. Drain meat, reserving 2 Tbsp. fat in the pan. Place the meat in a large bowl. Add the chopped onions to the pan and saute until transparent. Add onions to the beef. Add the spinach, seasonings, and both cheeses and stir to combine. When the mixture is cool, stir in the eggs. Cook the pasta shells according to the pkg. directions. Drain and rinse with cool water. Stuff the shells with the meat mixture and place in a large pan. Cover with the spaghetti sauce and cover with foil. Bake at 350 º for approximately 1 hour.
