2 c. sugar
1 T whole allspice
1 1/2 tsp salt
2 sticks cinnamon
3 1/2 c. white vinegar
1 1/2 c water (I use the water that the beets were cooked in for color)
3 quarts of beets

Directions:
Directions:
Wash and drain beets. Leave 2 inches of stem and the top root. Cover with boiling water and cook until tender. When cool, skin and slice or cut in chunks. Combine all ingredients except beets. Simmer 15 minutes. Put cut beets into solution and bring to boil. Pack beets in jars and pour solution over beets and seal. OR place in container with lid and refrigerate.
