1 cup all purpose flour, 1/2 tsp salt, 2 eggs, 1-1/4 cup milk, 1 T melted butter, goat cheese cut into 1/4" rounds - 6 each, 1/2 tsp fresh thyme minced, 1 tsp fresh parsley minced

Bring all ingredients to room temperature for best results. Heat oven to 450. Whisk together salt and flour in a bowl. In a separate bowl whisk together milk, eggs, melted butter, thyme, and parsley. Add wet mixture to flour and fold until blended, a few remaining lumps are ok. Grease a popover tin or muffin tin with butter, Fill cup 1/2 full with batter, add 1 round of goat cheese to each cup, and cover with batter to fill cup to 2/3 or 3/4 full. Bake at 450º for 15 minutes, then reduce heat to 350, and bake another 20 minutes. DO NOT OPEN OVEN DURING COOKING TIME. Check popovers after the cooking time, they should be brown and crusty on top. Remove from oven and unmold onto a rack. With a sharp pointed knife cut a small slit into the top of each popover to release the steam. Serve immediately or keep warm in oven(after it has been turned off)
