4 chicken breasts, 3-4T finely diced shallot - substitute sweet or red onion, flour, 2T butter, 1/2 cup Marsla wine

Directions:
Directions:
Place chicken breasts between 2 pieces of plastic wrap and pound with a mallet to 1/2" thickness. Salt and pepper chicken breasts and dust in flour. Cook over medium heat in a saute pan about 4-5 minutes per side, you may need to do a couple batches. Remove from pan and cover with foil to keep warm. Add shallots to pan and saute until translucent. Add Marsala wine and deglaze the pan scraping up any bits, bring to a simmer and reduce sauce slightly. Turn heat to low and add butter 1T at a time until incorporated. Add chicken breast to pan to heat through and coat with sauce.

You can substitute white wine or chicken stock for the Marsala wine. Marsala wine has such a unique taste it's worth buying a bottle for this recipe.
