1 Cup canned pear nectar (or blend pears to 1 cup)
2 TBLS. fresh lime juice
1 tsp. honey
1 tsp. finely minced fresh ginger
1/4 tsp. salt
1/4 tsp. pepper
Mixed salad greens of choice
2-4 Bartlett pears cored and thinly sliced
1/2 cup currants or cranberries
2 oz Roquefort Cheese (1/4 cup)
2 TBL. coarsely chopped pecans toasted

Directions:
Directions:
Combine the ncetar, lime juice, honey, ginger, salt, and pepper in a large bowl and stir to blend. Add the pears and toss well to coat. Place greens on salad plates, fan the pears on top, and spoon any remaining dressing over the salads. Garnish with dried fruit and pecans.
