Ingredients:  
1 1/2 lbs. fresh green beans, ends snipped but otherwise left whole.
1 1/2 c. thinly sliced Bermuda (purple/red) onion

Marinade:
3/4 c. olive oil
3/4 c. red wine vinegar
3/4 tsp. salt
LOTS of fresh ground black pepper
2 medium minced garlic cloves
fresh parsley or cilantro chopped

Directions:
Directions:
Prepare marinade and let stand.
Steam green beans until tender. Add beans (while still hot) to the marinade. Let cool.
Add onions, cover and refrigerate at least 3 hours.
