Single Batch
1/2 stick butter
1/2 chopped onion
1 - 10 oz. peg spinach, thawed and drained
1 can artichoke hearts, chopped
4 oz. sour cream
4 oz. cream cheese
1/2 cup Monterey Jack Cheese
1/2 cup Parmesan cheese

Double Batch
1 stick butter
1 chopped onion
2 - 10 oz. peg spinach, thawed and drained
1 can artichoke hearts, chopped
8 oz. sour cream
8 oz. cream cheese
1 cup Monterey Jack Cheese
1 cup Parmesan cheese
Directions:
Directions:
Saute onion in butter until tender. Save 1/4 of this for top of dip. Mix remaining ingredients and only 3/4 of each cheese. Spread in pan and place remaining onion mixture and cheese on top. Bake at 350º until cheese is melted. Serve with garlic bread pieces or crackers.
