1 1/2 lb. ground beef
1 small onion- chopped
1/2 green pepper, chopped
1 can tomato sauce
1 can enchilada sauce
1 tsp oregano
1 package shredded Mexican-style cheese
1 package tortillas, corn (or flour if preferred)

Directions:
Directions:
Preheat oven to 350º.
Brown beef and drain. Add onions and green pepper, salt and pepper to taste and brown for 3 more minutes.

Mix sauces, oregano and 1-1 1/2 cup cheese into meat, Set aside 1 cup sauce mixture. Stir remaining sauce into meat and simmer 5 minutes.

Place 1/3 cup meat mixture in tortilla and roll up. Place seam side down into a oiled/sprayed baking dish. Repeat until meat mixture is gone.

Pour remaining sauce, then cheese over enchiladas. Bake for 15-20 minutes.

My family loves this! Serve it with Tara Dailey's "Corny Casserole" and a salad and it's a meal for a crowd!
