4 cod fillets or other firm white fish, 1 med onion chopped, 2 cloves of garlic minced, 4T butter, 1/2-3/4 cup white wine, 1 28oz can diced tomato, 2T chopped parsley

Directions:
Directions:
Heat saute pan over medium heat, add olive oil to coat the pan, add onion and garlic and saute until translucent. Increase heat and add white wine and bring to simmer. Add the tomatoes and bring to light simmer. Add fish and cover until fish is cooked, about 8-10 minutes depending on the thickness of the fish. Remove fish from pan and cover with foil to keep warm. Reduce heat to low and slowly add the butter 1 tablespoon at a time while shaking the pan. Once butter is incorporated, add parsley and stir to mix. Serve tomato sauce over the fish in a bowl.

You can substitute or mix any type of seafood, shrimp, mussels, clams, scallops all work well. This is my "poor man's" Cioppino. Serve with a great crusty bread to sop up the sauce.
