2 cups cubed pork
1/2 cup oil
1 T dry sherry
1 T soy sauce

1 green pepper sliced
1 onion sliced

Sweet and Sour Sauce:
1/4 cup ketchup
1/2 cup brown sugar
1/2 cup pineapple juice (reserve pineapple)
1/3 cup vinegar


2 T cornstarch mixed with 1/3 cup water

14 oz. can pineapple chunks

Directions:
Directions:
Marinate pork in dry sherry and soy sauce for at least 20 minutes. Heat oil and stir fry until brown. Boil peppers and onions until tender, drain, then mix with Sweet and Sour Sauce. Add to pork. May be served over rice.

For sweet and sour sauce: mix sugar, ketchup, pineapple juice and vinegar.Stir and bring to boil. Stir in cornstarch mixture until thickened. Add pineapple when ready to serve.
