1 # ground chicken breast
1/2 c.seasoned bread crumbs
1 egg
2 T. grated Parmesan cheese
1 T. olive oil
2 each of small onions, celery stalks and carrots, chopped
1/2 tsp. each fennel and thyme
6 c. nonfat, low sodium chicken broth
1 zucchini diced
2 oz. noodles, cooked

Directions:
Directions:
Combine first 4 ingredients; season with salt and pepper. Shape into 24 meatballs. In skillet over medium-high heat, brown meatballs on all sides, in oil, and set aside. Add next 5 ingredients to pan, cook 10 minutes, stirring. (You will need a dash more oil or a little broth.) Add broth and zucchini; boil 15 min. Add meatballs, simmer 15 min. more. Stir in noodles; heat through and serve.
