3 medium to large ripe peaches
1 c. all-purpose flour
1/2 tsp. salt
1/2 tsp. baking powder
1/2 tsp. baking soda
3/4 c. sugar
4 T. butter, melted
1 egg
1 tsp. vanilla
1/3 c. buttermilk or plain yogurt
1/2 tsp. nutmeg or cinnamon
Streusel:
2 T. almonds, finely chopped
1 T. flour
1 T. brown sugar
1 T. cold butter, in bits

Directions:
Directions:
Preheat oven to 375º & coat an 8-inch square pan with non-stick spray. Pour boiling water over peaches & let stand 1 min. to loosen skins, then peel & slice peaches in 1/4 in. slices.
Sift together dry ingredients. Combine the other ingredients & add to flour mixture, blending until moist. Spread the batter in the pan & lay the peach slices evenly over the top. Sprinkle with nutmeg or cinnamon.
Make the streusel by blending the ingredients until crumbly. Sprinkle over the cake. Bake about 45 min., or until set and browned. Serve warm with ice cream of whipped cream.
