2 1/2 c breadcrumbs
1 1/2 tsp salt
1/2 tsp pepper
4 large eggs
12 chicken strips
1/3 c EVOO
2 T butter
6 T buffalo sauce
3/4 c blue cheese (optional)

Directions:
Directions:
Preheat oven to 425º. In a medium bowl, combine the breadcrumbs, salt and pepper. In a shallow bowl, beat the eggs. Coat a chicken piece with the eggs, then coat in the breadcrumbs; place on plate. Coat remaining chicken fingers.

In a large skillet, heat 1/4 c EVOO over medium-high heat until simmering. Add half of chicken fingers and cook, turning once, until golden brown, about 4 minutes. Transfer to a baking sheet. Repeat with remaining chicken. Bake until cooked through, about 10 minutes

Microwave butter at medium power until melted, about 45 seconds. Stir in buffalo sauce.

Place chicken tenders on a large platter, drizzle with the sauce and top with bleu cheese
