2 c. fresh breadcrumbs
3/4 c. minced onions
2 eggs
2 lb. ground beef
2 T. horseradish
2 1/2 tsp. salt
1 tsp. dry mustard
1/4 c. milk
1/4 c. catsup
1/2 c. catsup

Directions:
Directions:
Beat eggs lightly with fork, and then mix in beef, followed by crumbs and onions. Add horseradish, salt, mustard, milk, and 1/4 cup catsup. Combine lightly but well.
Place the meat in a loaf pan, preferably glass or ceramic. Spread 1/2-cup catsup over top and bake for 50 minutes at 400 degrees.

This is another recipe from our Topsham barn dweller, Marie Thompson Conant. It makes a very moist meatloaf and the horseradish gives it a slightly unusual flavor. (This one is in the cookbook at Ann Standridge's urging.)
