3 c. all-purpose flour
2 c. sugar
1 tsp. baking soda
1/2 tsp. salt
2 tsp. cinnamon
1/4 tsp. nutmeg
1 1/4 c. vegetable oil
3 large eggs, beaten
2 tsp. pure vanilla extract
3 c. diced apples
1 c. raisins
1 c. chopped pecans

Thoroughly grease a 10" Bundt or tube pan. Heat oven to 350º.
Measure flour, sugar, baking soda, salt, cinnamon and nutmeg into a large bowl. Add the oil and eggs; beat on low speed with an electric mixer until incorporated. Beat in the vanilla. Fold in the apples, raisins and pecans. Pour into prepared pan.
Bake for 1 hour and 15 minutes, or until cake is nicely browned on top and tests are done. Cool on wire racks for 15 minutes before removing from pan.
