2 cups sifted flour
1 cup ground blanched almonds
1/2 pound unsalted butter
1/2 cup sugar
1/8 tsp cinnamon
1/2 cup apricot jam
4 ounces semi-sweet chocolate
1 Tbsp butter
1/4 cup blanched slivered almonds

Directions:
Directions:
Combine flour and ground almonds in a bowl. Work cold butter into flour mixture with fingertips until it resembles coarse crumbs. Add sugar and cinnamon. knead dough with hands until it is smooth and well blended. Shape dough into a ball, wrap in plastic, and chill for 1 hour.

Preheat oven to 350 degrees. Roll out dough between 2 sheets of wax paper to 1/8 inch. Cut into 2 inch rounds with cookie cutter. Place 1 inch apart on ungreased cookie sheet.
Bake for 8 to 10 minutes, or until light golden brown. Let stand a few minutes to firm. Cool on wire racks.

When the cookies are cool, spread half the cookies with apricot jam, then top with remaining cookies to create a sandwich.
Partially milt the chocolate with one Tbsp of butter in a double boiler over simmering water. Remove from heat and stir rapidly until smooth and slightly cooled. Spread chocolate on half the cookie sandwich top, spreading thinly to the edges. Garnish each cookie with almond sliver.
