12 eggs
1 c. (12 oz) evaporated milk
1 t. salt
1/2 t. pepper
1 package (30 oz) frozen shredded hash brown potatoes, thawed
2 c. (8 oz) shredded cheddar cheese
1 large onion chopped
1 medium green pepper, chopped
1 c.cubed fully cooked ham

Directions:
Directions:
In a large bowl, combine the eggs, milk, salt, and pepper. Stir in the potatoes, cheese, onion, green pepper and ham. Pour into a greased 9x13 inch pan. Bake uncovered at 350º for 45-50 minutes or until a knife inserted near the center comes out clean.
