Margarine to grease griddle
1 1/4 c. all-purpose flour
1 egg
1 1/4 c. buttermilk
1/4 c. granulated sugar
1 heaping tsp. baking powder
1 tsp. baking soda
1/4 c. oil
pinch of salt

Directions:
Directions:
1. Grease griddle with margarine, and preheat.
2. Combine all of the ingredients and mix until smooth.
3. Pour the batter by ladle full onto hot griddle, forming 5-inch circles.
4. When the edges appear to harden, flip the pancakes. They should be golden brown.
5. Cook pancakes on the other side for the same amount of time until golden brown.

Makes 8 to 10 pancakes

** You may also drop fresh blueberries on top of pancakes as they cook on the first side but do not mix in the batter when mixing.
