3 eggs
2 c. sugar
1 c. vegetable oil
1 T. vanilla
2 c. grated zucchini, loosely packed
2 c. flour
1 T. cinnamon
1-1/2 tsp. baking powder
1 tsp. salt
1/2 tsp. baking soda
1 c. chopped walnuts

Directions:
Directions:
Preheat oven to 350º.
In a large bowl, beat eggs until foamy; add sugar,oil and vanilla,mix thoroughly . Fold in zucchini and walnuts. Sift remaining ingredients together and fold into mixture in bowl. Pour batter into 3 greased and floured loaf pans. Bake @ 350º for 45 minutes.
