2 c. potatoes (cut in cubes)
1/2 c. onions, chopped
1/2 c. carrots, sliced
2 c. water
4 T. butter
4 T. flour
2 c. milk
salt and pepper to taste
cheese (if desired)

Directions:
Directions:
Cook the potatoes, onions, and carrots in the water until tender. When done, do not drain. Mash the vegetables slightly by hand. In a separate pan, make the white sauce by melting the butter. Stir in the flour. Add the milk and seasoning to taste. Cook over medium heat, stirring constantly until mixture comes to a boil. Add you favorite cheese if desired and stir until melted. Add the white sauce to the cooked vegetables. Stir and heat until warm (do not boil.)
