2 Tablespoons lard
3 Cloves garlic, peeled and minced
2 Tomatoes, chunked
1 Onion, chucked
2 Pimientos, chopped
5 Fresh serrano chiles, stemmed, seeded, deveined, finely minced
1/2 Gallon chicken broth
3/4 Pound tortilla chips, broken
2 Chicken breast, shredded
Mexican queso fresco cheese
Lime wedges

Directions:

Cook chicken. In a Dutch oven, heat lard until hot but not smoking. Fry garlic, onion and tomatoes until soft, about 5 minutes or until color changes. Add pimientos and chiles, simmering for 2 minutes. Add chicken broth and return to boil. Salt and pepper to taste and simmer for 15 minutes on medium low heat. Stir in tortilla chips and chicken; cook until warmed through. Before serving, garnish with cheese and lime wedges.
