2 Tablespoons flour
2 Cups peeled, shredded russet potatoes (about 1 pound)
2 Tablespoon grated onion
1/2 Teaspoon salt
1/4 Teaspoon pepper
2 Tablespoons butter or margarine
2 Tablespoons vegetable oil

Directions:
Directions:
In a medium bowl, beat egg lightly; stir in flour until blended. Using dry paper towels, squeeze out all excess moisture from the shredded potatoes. In large skillet, melt butter with the vegetable oil over medium – high heat. For each pancake, spoon 2 tablespoons of potato mixture into skillet. Flatten each with a spatula into a 3” round. Fry each side for 2 – 3 minutes, or until crisp and golden brown. Place fried pancakes in a single layer on a baking sheet and keep warm in a 200 degree oven while frying remaining pancakes. Serve with warm applesauce, if desired.
