Mexican - Arroz Con Pollo Recipe

2 Ounces olive oil
1 Chicken, cut up
1 Onion
2 Cloves garlic
1/2 Green pepper, chopped
Pimiento strips
1 Small can peas
1 Teaspoon salt
1 Medium tomato, seeded, diced
1/2 Teaspoon saffron
1 Bay leaf
1 Cup rice, uncooked
2 Cups chicken broth

Brown chicken pieces, onion, garlic and green pepper in olive oil. Put rice in casserole dish with broth. Mix in seasonings and add browned chicken pieces. Cover and bake for 30 minutes at 350 degrees. Garnish with pimiento strips and peas and return to oven for a few minutes.
