1 pack/ 8 oz. Pancit Bihon Noodles (available at Asian grocery stores)
1-2 c. cooked shredded chicken, about 1 breast
2 c. chicken broth or stock
1/4 cabbage, sliced into strips
1 onion, sliced
3 cloves of garlic, crushed & minced
1/3 c. scallions/green onions, chopped
1 carrot, sliced into strips or 1-2 cups shredded carrots
2 tbsp. vegetable oil
3/4 c. diced celery
3 tbsp. soy sauce
Salt & Pepper to taste
5 pieces of calamansi or 1 lemon, sliced thinly

Directions:
Soak the pancit bihon noodles in warm water to soften for 10 minutes. Using a wok or large skillet, add vegetable oil and when hot, saute garlic & onions until tender. Add the chicken broth, chicken and all vegetables until cooked. Mix in the pancit bihon noodles and add soy sauce. Cook for about 5 minutes or until the noodles are soft. Add salt and pepper to taste.

Serve hot with sliced calamansi or lemon on the side.
