"As I ate the oysters with their strong taste of the sea and their faint metallic taste that the cold white wine washed away, leaving only the sea taste and the succulent texture, and as I drank their cold liquid from each shell and washed it down with the crisp taste of the wine, I lost the empty feeling and began to be happy, and to make plans."--Ernest Hemingway

Directions:
Butter a 8x8x2 inch pan and set aside. In a heavy 3 quart saucepan over medium heat, combine sugar with milk or cream and salt. Cook, stirring constantly until sugar dissolves and mixture boils. Continue cooking until mixture reaches soft ball stage (234 to 240 degrees). Stir as necessary to prevent burning. Remove from heat; set pan in cold water. Add butter; cool slightly before stirring. Add vanilla and nuts; beat until no longer glossy. Pour into pan; score while warm. When mixture is firm, cut into squares.
