4 strips bacon, raw & chopped
2 tbsp. vegetable oil
1/2 c. yellow onion, chopped
1 c. cheddar cheese
1 c. Parmesan cheese
1 c. Asiago cheese
1 c. fontina cheese
1 c. cream
2 c. whole milk
1/4 c. flour
2 egg yolks
1 lb. macaroni/elbow noodles

Directions:
Directions:
Preheat oven to 350º. Over medium heat, saute bacon in large, heavy saucepan until crispy. Remove bacon from grease to paper towels. Add vegetable oil and onions to bacon grease and saute until onions soft and translucent.

Add flour until oil absorbed (paste consistency). Add cream and stir until smooth. Add milk and cheese (alternating) until mixture is a creamy sauce. Add salt and pepper to taste.

Stir in bacon bits. Add the 2 egg yolks, stirring constantly. Pour over cooked macaroni and place in a 2 quart casserole or lasagna-size pan.

Bake for 30 minutes or until bubbly. DO NOT overbake or cheese sauce will separate.
