1 1/2c. vegetable oil
2 T. soda
1/3 c.buttermilk
2 T.cinnamon
1 T. lemon flavor or juice
1 c. pecans
3 c. grated carrots
1 T. salt

mix ingredients, pour into a loaf pan and bake at 300 degrees for 1 1/2 hours.

ice with icing below
