1 box yellow cake mix
4 eggs
3/4 c. oil
1 11 oz. can mandarin orange segments and juice
1 15 1/2 oz. can crushed pineapple and juice
1 3 3/4 oz. box instant vanilla pudding
1 9 oz. container of Cool Whip
1 small bag shredded coconut (optional)

Mix together cake mix, eggs and oil. Mix in mandarin oranges, including juice. Pour into greased 9 x 13 inch pan. Bake at 350 º for 35 to 40 minutes or until tester comes out of cake clean. Cool

Mix pudding and crushed pineapple including juice. Fold into Cool Whip. Frost cooled cake.
Sprinkle coconut over frosting. Refrigerate until serving.
