2 cups squash
1/2 cup chopped onion
1/2 cup chopped celery
1/2 cup chopped bellpepper
1 pkg Mexican cornbread
1 can chicken or turkey broth
1 can cream of chicken or mushroom soup
1 tsp sage
3 tbsp oil

Directions:
Directions:
Cook and mash squash and vegetables. Season.
Bake and crumble Mexican cornbread. Mix squash, broth, soup, crumbled cornbread, sage and oil. Grease square casserole. Bake until brown at 350º

I add grated cheese and some butter.
I also top the casserole with cheese.
