32 medium tomatoes (about 16 lbs.)
12 medium onions
3 red peppers, finely chopped
3 green peppers, finely chopped
3 tbsp. canning or kosher salt
2 tbsp. firmly packed brown sugar
2 c. cider vinegar
1 tbsp. ground cinnamon
1 1/2 ground allspice
1 1/2 tsp. ground cloves

Core, peel, then finely chop tomatoes. Combine tomatoes and next four ingredients in a large pot. Bring to a boil; reduce heat to medium, and cook, uncovered, for approximately 25 minutes. Add remaining ingredients reduce heat and simmer, uncovered, 1 1/2 to 2 hours or until thickened.

Quickly pack hot mixture into hot sterilized jars, leaving 1/2 in. headspace. Remove air bubbles; wipe jar rims. Cover at once with metal lids, and screw on bands. Process in boiling-water bath 10 minutes.

When I was fortunate enough to attend the cooking demonstration at the 2008 Louisiana Book Festival at Baton Rouge, one of the ladies in the audience asked for this recipe and I promised it would be in ten next book. So here it is....it's great on meatloaf or cream cheese, a real multi-tasker recipe.
