5 lbs. Irish potatoes
1 stick butter or margarine
6-8 T. flour
2 T. black pepper
salt to taste

Directions:
Directions:
Wash and peel potatoes. Cut them in half or quarters. You want large pieces that are about the same size. Boil in salted water until just fork tender. Drain, saving the liquid. In the same pan, slowly melt butter so it won't burn. Stir in the flour. slowly add the potato liquid, stirring constantly to keep from lumping. Add pepper and salt. Add potatoes and heat thoroughly.
