4 c. finely chopped hot peppers
1 red bell pepper, seeded & finely chopped
(1) 12oz. can apple juice concentrate
2 tbsp. fresh lemon juice
1 1/2 packages powdered pectin
8 c. sugar

Directions:
Directions:
Combine peppers, apple and lemon juice in a large stockpot and heat to a boil. Add the pectin and return to a boil. Add the sugar while stirring. Bring to a boil again and boil for 1 minute. Remove from heat. Pour into hot, sterilized jars. Seal and process 5 minutes.

As the jelly cools, shake very gently to keep the peppers evenly distributed. They might tend to gather at the top.
