6-8 large green tomatoes, diced
6 medium white onions, diced
5 small-medium, pickling cucumbers, diced
1 tbsp. (6 cloves) garlic, crushed
2 3/4 c. white vinegar
3 c. water
1/4 c. canning salt (see note)
2 tbsp. dry dill weed
1/2 tsp. ground black pepper
1/2 tsp. crushed red pepper
1/2 tsp. celery seeds

Combine all ingredients and heat thoroughly. Quickly pack into hot, sterilized jars. Seal and process in canner for 10 minutes.

Kosher salt may be used in place of canning salt. Also, always leave 1/2 in. headspace in your jars after sealing. You'll know that your jars sealed when you hear them pop after cooling or if you press down on lid and it does not pop back up.
