12 vanilla wafers
2-8oz. cream cheese, room temperature
1/2 sugar
1/2 tsp vanilla
2 eggs
pie filling, any flavor

Directions:
Preheat oven to 350º. Line muffin tins with cupcake paper. Place a vanilla wafer into each paper. Beat cream cheese until smooth. Add sugar and vanilla and mix well. Add eggs and beat until smooth. Pour mixture into muffin tins. Bake 20 minutes or until centers are almost set. Refrigerate 2 hours or overnight. Top with pie filling.

This is so easy and so yummy. The kids love to drop the wafers into the tin. You can top it with anything you want, but they are really great just plain!
