15 oz can black beans, rinsed and drained
1/2 cup purchased chunky salsa
1/2 teaspoon ground cumin
2- 2 1/2 pound purchased roasted chicken
1/4 cup shredded Monterey Jack cheese with jalapeño chile peppers( 1 ounce)
Dairy sour cream ( optional)

Directions:
Directions:
preheat the oven to 350º. In a small bowl stir together beans, 1/4 cup of salsa and the cumin. Divide bean mixture among four au gratin dishes or casseroles. Set aside. Cut chicken into quarters place one chicken quarter on top of the bean mixture in each dish or casserole. spoon remaining 1/4 cup of salsa evenly over chicken. Sprinkle with cheese bake for 15-20 minutes or until heated through. If desired top with sour cream
