four 8-10 oz salmon steaks
1/4 teaspoon salt
1/8 teaspoon freshly ground black pepper
1 Tbs olive oil
2 garlic cloves, minced
1/4 cup dry white wine, such as sauvignon blanc
1 Tbs fresh lemon juice
2 Tbs choped fresh basil, or oregano or a combination.

season the salmon with the salt and pepper and set aside. in a large skillet heat the oil over medium heat. Add the garlic and cook until frgrant, about 1 minute. Add the wine and lemon juice and bring to a simmer. Add the salmon and Cover. Simmer until the salmon looks opaque when flaked with the tip of a knife. 12-15 minutes
Using a slotted spatulae transfer the salmon to a platter sprinkle with chopped basil and serve immediatley
