1 large and 1 small can V-8 juice
1 can kidney beans
1 can garbanzo beans
6 oz macaroni or small pasta
1 large potato, peeled and chopped
2 carrots, peeled and chopped
1 large zucchini, chopped
1/2 package frozen chopped spinach
Parmesan Cheese (optional)

Directions:
Directions:
Pour large can of V-8 juice and 1/2 can of water into large soup pot. Add beans (liquids and all), chopped vegetables, pasta and spinach. Simmer until pasta is cooked and vegetables are soft. Add V-8 as needed Serve with sprinkle of parmesan.

Amounts of vegetables or pasta can be modified. Sometimes I add a can of Italian beans. I also usually add the macaroni a little later than the rest so it doesn't get real mushy by the time the potatoes and carrots are cooked. If your neighbors are vegan, skip the parmesan.
