4 c. diced apples
1 1/2 c. sugar
2 eggs
1/2 c. oil
1 tsp. vanilla
2 1/2 c. flour
1/4 tsp. salt
2 tsp baking soda
1 T. cinnamon
1/2 tsp. nutmeg

Combine apples, sugar and pecans. Let stand 4 hours at room temp, or overnight in the refrigerator.

Preheat oven to 375. Grease and flour 2 9x9 pans.

Combine oil and eggs. Mix dry ingredients. Add to oil, and mix with vanilla. Hand mix apples with dry ingredients. Batter will be stiff. Pour into prepared pans.

Bake 40-50 minutes.
