4 eggs
1 cup cooking oil
1 cup sugar
1 cup dark brown sugar
2 cups flour
1 t. baking powder
1 t. baking soda
3T + 2 t. cinnamon
1 t. cloves
t. nutmeg
t. ground ginger
3 cups shredded carrot

Preheat oven to 350 . Grease and flour two 9 inch pans.

In a large bowl, beat together eggs, oil, and sugar. Add spices. Stir in flour, baking soda, and baking powder. Mix in carrots. Pour into prepared pans.

Bake in the preheated oven for 30 minutes, or until a toothpick inserted into the center of the cake comes out clean. Let cool in pan for 10 minutes, then turn out onto a wire rack and cool completely.

Frost with Cream Cheese Frosting.
