2 onions
1 stalk celery
2 carrots
4 green peppers
8 oz. mushrooms
3 cloves garlic
6 Tbsp. olive oil
2 pt. clam juice
4 tomatoes, peeled and chopped
2 Tbsp. gumbo file
2 Tbsp. Cajun seasoning
2 Tbsp. cornstarch
3 Tbsp. water
1 lb. shrimp
8 oz. white fish, cut into bite size pieces
12 oz. scallops
4 cherrystone clams (optional)

Directions:
Directions:
Dice vegetables and chop garlic. Place olive oil and vegetables in large pot. Braise until cooked but still firm. Add clam juice, tomatoes and seasonings. Bring just to a boil. Mix cornstarch and water. Stir into gumbo sauce until slightly thickened. Add seafood. Let simmer 30 minutes until all of the seafood is fully cooked.

I omit the green peppers for Greg. I also just add whatever seafood I have. It never tastes the same twice!!
