6 potatoes
1 - 2 bellpepper, thinly sliced
1 - 2 onion, thinly sliced
1/2 stick butter
1 cup milk
salt and pepper to taste
1 tbsp flour
1 tsp jalapeño pepper, minced (or to taste)
1 large Velvetta cheese

Directions:
Directions:
Cut potatoes into slices and boil into tender. Drain water. Layer potatoes into baking pan (13x13x9). Melt butter in saucepan, add flour and stir until blended. Gradually add milk, stirring constantly. Add Velvetta cheese (cubed) and jalapeño pepper, cook until melted. Cover potatoes with onions and bellpepper, salt and pepper. Pour melted cheese over potatoes. Cook in 350º oven for 45 minutes to 1 hour.
