3 Tbsp. butter
1 large onion, diced
1 large butternut squash
1 cup nuts (walnuts, pecans, peanuts, your choice)
1 Tbsp. brown sugar
1 tsp. cayenne pepper
1/2 cup Rainier cherries (seeds removed) or Craisins
salt and pepper to taste

1. Toast nuts on an ungreased baking sheet at 350 degrees for 5 to 8 minutes.
2. Peel the squash, and remove the seeds. Cut into 1/2 inch cubes. There will be about 6 cups squash.
3. Par cook the squash in the microwave for about 3 minutes.
4. Melt butter or margarine in a heavy large skillet over low heat. Add onion and saute until very tender, about 10 minutes. Add squash, cherries, brown sugar, and cayenne pepper and toss to coat. Cover. Cook until squash is tender but still holds it shape, stirring frequently, about 10 minutes. Season to taste with salt and pepper.
5. Sprinkle with chopped nuts. Serve.

I was grocery shopping, and I saw a butternut squash and put it in the basket. I had never cooked one before, but I figured I'd find something to do with it. I came across this recipe, and made a few changes. The end result was surprisingly good. We'll make it again. :)
