2 Whole Bay Leaves
1 tbsp. Salt
1 tsp. Cayenne Pepper, Ground
1 tsp. Black Pepper, Ground
1/2 tsp. White Pepper, Ground
1/2 tsp. Cumin, Ground
1/2 tsp. Nutmeg, Ground
Meat Mixture:
4 tbsp. Unsalted Butter
3/4 c. Onion, finely chopped
1/2 c. Celery, finely chopped
1/2 c. Bell Pepper, finely chopped
1/4 c. Green Onions, finely chopped white & green part
2 tsp. Garlic, minced
1 tbsp. Tabasco Sauce, Traditional Style
1 tbsp. Worcestershire Sauce
1/2 c. Evaporated Milk
1/2 c. Catsup
1 1/2 lbs. Ground Beef
1/2 lb. Ground Pork
2 Eggs, lightly beaten
1 c. Dry Bread Crumbs, very fine

Directions:
Directions:
Combine all Seasonings ingredients, set aside. Melt butter in pan on medium heat; add Onions, Celery, Bell Peppers, Green Onions, Garlic, Tabasco, Worcestershire Sauce and Seasoning mixture. Saute until it forms a Roux [thickens and begins to stick to pan [about 6 minutes]; scrape the pan bottom well and add Milk and Catsup, cook 2 Minutes longer. Remove from Heat and cool to room temperature. Stir cooled mixture in to Ground Beef & Pork, add Eggs and mix well. Bake at 350 º in baking pan or large loaf pan for 45 minutes until well cooked.

This is another recipe I got from Shirley Moroney, her husband Bill was a Judge so she was expert at entertaining and cooking. This can be made ahead before baking - and the spice mix can be made ahead and kept on hand. Spicy and delicious.
