1 lb. sausage, browned and drained
2 (8.5oz) pkgs. cornbread mix
4 eggs
12 oz small curd cottage cheese
3/4 c. melted butter
1 (10oz) pkg. chopped broccoli, thawed
1 large onion, chopped
1 c. shredded cheddar cheese

Directions:

Preheat oven to 350º.
Brown sausage, drain, set aside.
In a large bowl, combine cornbread mixes. In another bowl, beat eggs, cottage cheese and butter. Stir into cornbread mix until just moistened. Fold in broccoli and onion. Pour into a greased 9 x 13 x2 in. baking pan. Bake 40 mins. check for doneness by inserting a toothpick. If it comes out clean, sprinkle cheddar cheese on top and bake another 5 minutes, or until cheese is melted. Let stand 10 minutes before cutting. Serve warm with a green salad.
