1 4-5 lb. Roast of Beef [such as Round, Cross Rib or Brisket]
Oil
1 Envelope Dry Onion Soup Mix
Garlic Powder [about 1 tsp.]
Sauce:
Favorite prepared Bar-B-Q Sauce
Water
Corn Starch
Liquid Smoke

Directions:
Directions:
Heat oil [about 2 Tablespoons] in heavy skillet. Brown all sides of Roast. Transfer into roasting pan, sprinkle with dry Onion Soup mix and Garlic Powder. Roast until desired doneness in oven. Cool, remove excess fat and slice and set aside, but reserve juices. Place juices in refrigerator to congeal and skim off excess fat from juices. Add water to chilled juices to make about 1 cup and pour in prepared Bar-B-Q sauce, liquid smoke [optional] and a couple of tablespoons of cornstarch; heat in saucepan to thicken. Pour sauce over Beef and return to oven to reheat and caramelize the sauce.

This recipe came from Ida Mae Varga, my nieces Allyson's & Megan's grandmother - it is a great dish to make ahead and serve when reheating. It can also be made in the Crock Pot to reheat. It is a good budget dish since cheaper cuts of Beef can be used.
