Potato Mix:
1 stick Butter
2 lb. bag Frozen Hash Brown Potatos
1 pt. Sour Cream w/ Chives
1/2 c. White Onion, Chopped [or Sweet, or Yellow]
1 can Cream of Chicken Soup
2 c. Grated Cheese [Longhorn, Cheddar, Colby]
1 tsp. Salt
1/4 tsp. Pepper
Topping:
1 c. Cornflake Crumbs
1 stick Butter

Directions:
Directions:
Melt Margarine or Butter, mix in frozen Potatos, in separate bowl mix together Sour Cream, Onion, Soup, Cheese, Salt & Pepper. Stir into Potatoes. Pour Potato mixture into greased cassole dish about the size of a 9"X13" pan. Mix Corn Flake crumbs and Margarine or Butter; spread over top of Potatos.

Bake 1 hour at 350º
Cover with foil the last 15 minutes of baking.

Jan - a newspaper clipping Mom has in her Recipe Box calls these "Funeral Potatoes" - well they are "To Die For" and a good dish for a crowd or to make ahead. This recipe is easy to "Skinny Down" - use a little less Butter, use Light Sour Cream, Light Soup, Light 2% Cheese, and a little less Butter in the Topping. Or make it Fatty and have a smaller portion. Delicious and easy to make ahead! Good brunch dish!!
